  • 4 skinless chicken breast fillets
  • finely grated rind and juice of 1 lemon
  • 1 tablespoon chopped fresh herbs, such as tarragon, parsley, oregano or thyme
  • 2 teaspoons brown sugar
  • 2 tablespoons Flora® Salt Reduced Spread
  • 1 x packet Continental® Italian Sun Dried Tomato & Basil Rices of the World
Step 1: Preheat oven to 220°C. Combine zest and juice of lemon, herbs, sugar and Flora® spread in a bowl.
Step 2: Make 3 deep diagonal cuts across each chicken breast and place in a baking dish. Spread chicken with lemon and herb mixture and bake for 20-25 minutes until browned and cooked through.
Step 3: Make Rice as per pack directions and serve with baked chicken and salad

For a balanced meal: Serve with a tossed green salad.
