Simple things like washing hands before cooking or eating, and teaching children to do the same, are a great way to start.

One of the most important food safety tips is to always scrub boards and utensils well with hot soapy water between using them with raw food and cooked food.

Don't leave cooked foods at room temperature for any longer than necessary. When you cook ahead of time ensure you keep the food hot until you are ready to eat or, once the steam stops rising, cover and refrigerate for later use. Large portions of food take longer to cool so divide into smaller batches so they cools quickly. Reheat foods thoroughly so they are steaming or boiling and only ever reheat left over food once.

Don't thaw frozen food on the benchtop, allow more time and thaw in the fridge. Or, thaw in the microwave and cook immediately.


MEASUREMENTS
Continental uses Australian Standard Metric Measures, used in Australia since the 1960s!
This means we use metric cup and spoon measures. If you convert to Imperial, US or other measures, make sure you do so consistently throughout the recipe.

SERVING SUGGESTIONS
Continental recommends following nutritionists' advice to eat 5 serves of vegetables every day. We try to help you achieve this by including them in our recipes on the back of our packs.

Fats and Oils
Using a variety of unsaturated fats and oils is essential for good health. Continental recommends using polyunsaturated vegetable oils in recipes (such as sunflower or safflower). If the recipe is Mediterranean in flavour, olive oil can be used.

Where fat is used in a recipe, we recommend using Flora polyunsaturated spreads. Health and nutrition experts recommend using polyunsaturated spreads instead of butter or butter blends to help lower your saturated fat intake. In addition, using salt-reduced spreads can help reduce your sodium intake. We have found little or no difference in performance or flavour when using spreads instead of butter in recipes.


COOKING TIPS

Browning
  • Heat the pan well, add oil and allow to heat through before adding food
  • Make sure meat or vegetables are dry before adding to pan
  • Cook undisturbed until well browned, then turn
  • Do not crowd the pan or the food will stew - if necessary brown in batches
  • Do not discard any meat juices which collect from browned meat, they contain important nutrients from the meat

COOKING TIMES
  • Cooking times can only be approximate, as they will vary with different equipment and appliances
  • For casseroles and stews, you cannot reduce cooking time by increasing the cooking temperature - tougher cuts of meat are more flavourful but need time as well as moisture to tenderise and release flavour into the sauces

DOUBLING THE RECIPE
  • Many recipes can be doubled. However it is best to increase any liquids in the recipe by only 1½ times, then add extra if needed - the evaporation rate from the doubled quantity will be the same as from the single recipe.
