Your family will love to come in from the cold to this heart-warming beef casserole. It’s packed full of lean meat and fresh vegies and best served on a bed of creamy mashed potatoes.

Ingredients

  • 2 tablespoons plain flour
  • 2 teaspoons vegetable oil
  • 500g Beef, Chuck Steak, lean, raw
  • 1 large onion, sliced
  • 1 tablespoon vegetable oil
  • 1 packet Continental® Beef Stroganoff Recipe Base
  • 2 medium potatoes, peeled, cubed
  • 2 cups sliced mushrooms, Swiss brown or button
  • 1 large carrot, peeled and sliced
  • 11/4 cups water
  • 1 x 425g can crushed tomatoes

Instructions

  1. Preheat oven to 180°C.
  2. Evenly coat beef in flour. In a heavy pan, heat oil and fry onions until softened. Add beef and cook until well browned.
  3. Place beef and onions in an ovenproof casserole dish, with mushrooms, potatoes, Recipe Base, water, carrots and tomato.
  4. Place in oven and cook for 1 hour, uncovered or until beef is tender.
  5. Serve warm with mashed potatoes, steamed fresh greens and crusty bread.

    Hint:
    Place all ingredients into a slow cooker and mix well. Turn on low heat and cook for 6-8 hours. You can throw it together in the morning before you go to work, and it will be ready for you when you come home.
