Chorizo & Chickpea Shakshuka

  • 1 tablespoon olive oil
  • 1 red onion, finely chopped
  • 1 chorizo, thinly sliced
  • 400 g canned diced tomatoes
  • 3/4 cup water
  • 1 sachet Continental Seasoning Sensations Spanish Paella
  • 400 g canned chickpeas, rinsed, drained
  • 4 eggs
  • chopped fresh continental parsley, to garnish
  • toasted sliced sourdough bread, to serve

  1. Heat oil in a large deep frying pan over medium heat. Add chorizo and cook, stirring occasionally, for 3 minutes. Add onion and cook, stirring occasionally for a further 5 minutes.

  2. Add tomatoes, water, seasoning mix and chickpeas. Bring to the boil, stirring occasionally. Reduce heat to medium low and simmer for 5 minutes, stirring occasionally.

  3. Using a spoon, make four shallow indents in the tomato mixture. Crack 1 egg into each hole. Cook, covered, for 5-7 minutes or until whites are set and yolks still remain runny, or until cooked to your liking. Sprinkle with parsley and serve with toasted sourdough.
