  • 1 tablespoon vegetable oil
  • 1 medium red onion, halved, thinly sliced
  • 3 teaspoons chilli paste
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 litre Continental Superb Stock Chicken
  • 500 g chicken breast stir-fry strips
  • 3 tablespoons reduced-salt soy sauce
  • 1 1/2 tablespoons rice vinegar
  • 100 g rice vermicelli
  • 4 spring onions, thinly sliced

  1. Heat oil in a 2.5 litre saucepan over medium heat. Add onion and cook ,stirring occasionally, for 5 minutes until softened. Add chilli, garlic and ginger and cook, stirring for 1 minute.

  2. Pour in stock. Increase heat to high and bring stock to a simmer. Add chicken and soy sauce, reduce heat to medium and cook for 5 minutes or until chicken is just cooked. Stir in vinegar. Season to taste.

  3. Meanwhile place vermicelli noodles in a large heatproof bowl. Cover with boiling water and set aside for 2 minutes or until softened. Drain. Rinse with cold water.

  4. Divide noodles between 4 serving bowls. Ladle in the soup and chicken. Top with spring onions and serve.
