  • 2 packets Continental Pasta Creamy Tomato Parmesan&basil
  • 2 cups (500mL) hot water
  • 250 g cherry tomatoes, halved
  • 185 g can tuna in oil, drained
  • 120 g packet baby spinach leaves
  • 1 Lebanese cucumber, quartered lengthways, chopped
  • 1/2 small red onion, thinly sliced
  • 1/4 cup pitted Kalamata olives
  • 2 tablespoons lemon juice
  • 1 tablespoon pine nuts, toasted
  • 1/2 cup crumbled feta cheese

  1. Place pasta packet contents and water into a saucepan. Bring to the boil, stirring. Reduce heat to medium-low and simmer, stirring regularly, for 14 minutes until pasta is tender and sauce has thickened. Transfer to a large bowl. Set aside to cool for 10 minutes.

  2. Add tomatoes, tuna, baby spinach, cucumber, onion, olives and lemon juice to pasta, toss to combine. Divide among serving bowls. Top with pine nuts and feta.
