  • 1 tablespoon oil
  • 2 skinless chicken thigh fillets, diced
  • 1 1/2 cups (225g) diced peeled pumpkin
  • 3/4 cup (190mL) hot water
  • 3/4 cup (190mL) milk
  • 91 g packet Continental Pasta Spinach Parmesan & Bacon
  • 150 g sugar snap peas
  • 1 tablespoon pepita seeds, toasted

ONE POT CHICKEN, PUMPKIN & SPINACH PASTA WITH SUGAR SNAP PEAS
  1. Heat oil in a large, deep frying pan over medium-high heat. Cook chicken, turning occasionally, for 4 minutes or until golden.

  2. Add pumpkin and cook, stirring for 5 minutes. Stir in water, milk and pasta packet contents. Bring to the boil, stirring. Reduce heat and simmer for 10 minutes, stirring regularly.

  3. Stir in sugar snap peas and cook, stirring regularly, for a further 2 minutes or until pasta is cooked. Serve sprinkled with pepita seeds.
