  • 1 packet Continental Spinach Ricotta and Parmesan Rice & Quinoa
  • 1 cup (250 mL) water
  • 1 small (400 g) sweet potato, peeled and diced
  • 1/3 cup plain flour
  • 1 egg, lightly beaten
  • 2 tablespoons toasted pine nuts
  • freshly ground black pepper and sea salt, to taste
  • 1/4 cup oil
  • 4 lettuce leaves
  • 2 tomatoes, sliced
  • 1 avocado, sliced
  • 4 seeded or wholemeal burger buns
  • 4 tablespoons hommus, tzatizki or mayonnaise

  1. Place Rice & Quinoa packet contents and water into a saucepan. Cook following packet directions. Remove from heat, set aside and allow to cool.

  2. Meanwhile place sweet potato into a large microwave safe bowl. Cover and microwave on HIGH for 5-7 minutes or until tender. Carefully remove cover. Drain. Transfer to a bowl. Mash and allow to cool.

  3. Add cooled rice quinoa mixture to the sweet potato. Add flour, egg and pine nuts, stir until combined. Season to taste. Form mixture into 4 burger patties, then flatten slightly. Heat oil in a large frying pan over medium heat. Cook patties for 3 minutes each side or until golden brown and warmed through.

  4. Serve in burger buns with lettuce, tomato, avocado and either hommus, tzatziki or mayonnaise.
