Vietnamese Pork Noodle Stir-fry

  • 100 g dried rice vermicelli
  • 500 g lean pork mince
  • 250 g snow pea, halved
  • 1 carrot, halved lengthways, thinly sliced
  • 1 x 34 g sachet Continental Seasoning Sensations Vietnamese Stirfry
  • 2/3 cup (170mL) water
  • 2 cups bean sprouts
  • 1/2 cup coriander leaves, roughly chopped

  1. Place noodles in a large heatproof bowl. Cover with boiling water. Set aside for 6 mins or until noodles are tender. Drain. Transfer to a large bowl. Using kitchen scissors cut noodles into smaller pieces.

  2. Heat a non-stick wok, or large frying pan, over high heat. Add 1 tbsp oil, swirl to coat. Stir-fry pork for 3 mins or until browned. Add carrot. Stir-fry for 3 mins. Combine seasoning mix with water. Add to pan with snow peas. Stir-fry for 2 mins or until sauce has thickened slightly. Add pork mixture to noodles, toss to combine.

  3. Divide noodle mixture among serving bowls. Top with bean sprouts and coriander. Serve.
