Smoky Paella with Prawn & Chorizo

  • 1 tablespoon oil
  • 1 chorizo, sliced
  • 1 red capsicum, chopped
  • 1 packet Continental Rice Paella & Smoked Paprika
  • 1½ cups hot water
  • 250 g raw prawns, peeled
  • ¼ cup chopped parsley
  • juice and rind of 1 lemon to serve

  • 1 Heat oil in a frying pan and brown chorizo and capsicum.
  • 2 Add Rice and water, bring to the boil, cover and simmer gently for 15 minutes.
  • 3 Add prawns 5 minutes before the end of cooking. Stir, recover and stand for 2 minutes before sprinkling with parsley and grated lemon rind. Squeeze over lemon juice before serving.
