  • 190 g packet Continental Cheesy Rice - Family Pack
  • 1 2/3 cups hot water
  • 2 teaspoons margarine
  • 1 medium zucchini, grated
  • 1 cup frozen corn kernels
  • 1/2 cup grated Parmesan
  • 4 eggs, lightly beaten
  • 2 green spring onions, thinly sliced
  • tomato relish, to serve
  • baby spinach and rocket salad, to serve

  1. Place cheesy rice packet contents, water and margarine into a saucepan. Bring to the boil, stirring. Cover. Reduce heat to low and cook for 10 minutes. Stir. Remove from heat. Transfer to a bowl. Set aside for 5 minutes to cool slightly.

  2. Meanwhile pre-heat Sunbeam Pie Magic pie maker. Add zucchini, corn, parmesan cheese, eggs and spring onion to cooled rice mixture. Stir to combine. Season to taste

  3. Spray pie maker holes with oil. Place ¾ cups of mix into each pie hole. Close and cook for 8 minutes or until golden brown. Repeat with remaining rice mixture. Serve with tomato relish and salad.
