Finely dice two tomatoes and place in a bowl. Thinly slice the other two tomatoes and set aside.

Heat oil in a non-stick frying pan over medium heat. Add mince and cook for 7-8 minutes, stirring occasionally, or until the mince is browned. Stir in Continental Chilli Con Carne, diced tomato, black beans and ⅓ cup (80mL) water. Cover and cook for a further 5-7 minutes, stirring occasionally, or until the sauce has thickened.

Lay a wrap onto a clean chopping board. Make a cut from the middle of the wrap down to the end, so that only a quarter of the wrap is cut. Spread 1 tablespoon of sour cream on one quarter and top it with 2 teaspoons of corn kernels. Place 1 round of sliced tomato on the second quarter of the wrap and 2 tablespoons of cheese on the third quarter. Spread about 3 tablespoons of the cooked mince mixture on the last quarter of the wrap.

Fold up the wrap, starting from the bottom left quarter and folding it up over the top left, then folding it over to the top right, then folding it down to the bottom right. Repeat with the remaining wraps and filling until you have 8 folded wraps.

Place 4 of the folded wraps in a preheated panini press for flat plate sandwich maker. Toast for about 5-7 minutes or until the cheese has melted and the wrap is slightly golden and crispy. Repeat with the remaining 4 wraps. *Chef’s Tip: Alternatively, pan-fry the wraps in an oiled non-stick frying pan, over medium heat about 3-4 minutes a side.
