Place rice packet contents, water and 1 teaspoon oil in a saucepan. Bring to the boil. Reduce heat and simmer for 10 minutes or until water is absorbed and rice is cooked. Remove from heat. Stir, cover and set aside for 2 minutes.

Meanwhile heat remaining 3 teaspoons oil in a large non-stick frying pan over high heat. Add mince and cook, stirring for 3 minutes until browned, breaking up mince with a cook spoon during cooking.

Reserve 1/4 cup chopped spring onions. Add garlic and remaining spring onions to pan. Cook for 3 minutes or until softened. Stir in hoi sin sauce and cook for 1-2 minutes, until heated through.

Divide rice mixture amongst lettuce leaves, top with mince mixture and carrot. Sprinkle with peanuts and reserved spring onions. Drizzle with sriracha sauce (if using).

Use 180g packet Continental Family Oriental Fried Rice and 1 2/3 cup (440mL) water and then just double the remaining ingredients.
