  • 2 tablespoons oil
  • 1 large onion, finely diced
  • 2 cloves garlic, crushed
  • 1 fresh green chilli, seeded, finely chopped
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground turmeric
  • 2 tablespoons tomato paste
  • 1 1/2 litres hot water
  • 400 g canned diced tomatoes
  • 3 pots Continental Stock Pot Sensations Vegetable Stock Pot
  • 1 cup dried red lentils
  • 1/4 cup chopped coriander leaves
  • sliced fresh crusty bread, to serve

  1. Heat oil in a large saucepan over medium heat. Add onion and and cook, stirring occasionally for 5 minutes or softened. Add garlic, chilli, ginger and turmeric and cook, stirring, for 30 seconds until fragrant. Add tomato paste and cook, stirring, for 1 minute.

  2. Add hot water, stock and tomatoes. Bring to the boil, stirring. Stir in lentils. Reduce heat to low and cook, stirring occasionally, for 20 minutes, or until lentils are tender and soup has thickened. Season with black pepper.

  3. Sprinkle with coriander and serve with crusty bread.
