Beef Stroganoff Steaks

  • 2 teaspoons sunflower oil
  • 4 x 125 g beef Scotch fillet steaks
  • 1 small onion, sliced
  • 2 cups sliced mushrooms
  • 1 packet Continental Recipe Base Beef Stroganoff
  • 1¼ cups (310ml) water
  • 2 tablespoons sour cream
  • 2 tablespoons chopped parsley
  • 4 medium potatoes, peeled, cooked and mashed
  • 2 cups green beans, steamed

  1. Heat oil in a large frying pan over medium high heat. Cook steaks for 2-3 minutes per side, for medium or until cooked to your liking. Transfer to a plate, cover to keep warm.

  2. Meanwhile in another frying pan heat remaining oil over medium heat. Cook onions for 5 minutes, stirring occasionally, until softened. Add mushrooms and cook for a further 5 minutes.

  3. Combine Recipe Base and water then add to the onion mixture. Bring to the boil, stirring.

  4. Remove from heat and stir through sour cream and parsley.

  5. Serve steak on a bed of mashed potato, spoon over the sauce and serve with steamed green beans.
