  • 1 tablespoon oil
  • 500 g lean beef mince
  • 1 red capsicum, deseeded, diced
  • 1 sachet Continental Recipe Base Chilli Con Carne
  • 2 1/4 cups (560 mL) hot water
  • 1 packet Continental Cheesy Rice - Family Pack
  • 400 g can kidney beans, rinsed and drained
  • 1/2 cup frozen corn kernels
  • 1 tablespoon chopped pickled jalapenos (optional)
  • fresh oregano leaves, to garnish

Cheesy Mexican Beef & Bean Rice
  1. Heat oil in a large deep frying pan over medium-high heat. Add mince, and cook, stirring, for 5 minutes until browned. Add capsicum, Chilli Con Carne recipe base and ½ cup water and cook, stirring, for 3 minutes.

  2. Add rice packet contents, kidney beans, corn and remaining 1 3/4 cups water. Bring to the boil, stirring. Cover, reduce heat to medium low and cook for 10 minutes, stirring occasionally.

  3. Stir through jalapenos, replace lid and set aside for 2 minutes. Serve garnished with oregano leaves.
