  • 1 packet Continental Cheesy Mash - Family Pack
  • 1 1/2 cups plain flour, plus extra for dusting
  • 1 large egg, lightly beaten
  • 1/2 cup frozen corn kernels, defrosted
  • 1 cup diced bacon, cooked
  • 1/2 teaspoon freshly ground black pepper
  • 10 (2cm x 2cm) cubes cheddar cheese
  • 1 cup oil, for shallow frying
  • 2 green spring onions, thinly sliced, plus extra to serve
  • 3 cups mixed salad leaves, to serve

  1. Place packet contents into a large heatproof bowl. Pour over (250mL) boiling water, and mix with a fork until combined and mix is firm and fluffy. Add flour, spring onion, egg, corn, cooked bacon and pepper. Stir until mixture combines and a potato dough ball is formed.

  2. Transfer dough to a chopping board, lightly dusted with flour. Roll dough into a log. Cut into10 evenly sized pieces. Lightly flour your hands then roll each piece into a ball. Place each ball onto a baking tray lightly dusted with flour.

  3. Push one cube of cheese into a potato dough ball then roll the ball between your hands to seal in the cheese while forming patty shapes. Return back to the floured baking tray. Repeat with remaining potato dough balls. Place potato cakes into freezer for 20 minutes or until just firm to the touch.

  4. Heat oil in a medium-sized pan over medium heat. (*Chef’s Tip: Place the back of a wooden spoon into the oil. When small bubbles form around the spoon, the oil is ready for frying) Shallow fry potato cakes, in batches, for 3-4 minutes each side or until golden brown. Transfer cakes to a plate lined with paper towel.

  5. Serve potato cakes hot onto serving plates. Garnish with spring onion and serve with salad.
