Italian Meatball Sub

Beef meatballs are not just made for pasta! This beef meatball recipe will show you that beef and tomato sauce is good on bread too.

  • 500 g lean beef mince
  • 1 egg, lightly beaten
  • 1/3 cup dried breadcrumbs
  • 1 tablespoon olive oil
  • 1 packet Continental Recipe Base Spaghetti Bolognaise
  • 1/2 cup (125mL) water
  • 400 g can chopped tomatoes
  • 4 Turkish bread rolls, split, toasted
  • 1/3 cup grated Parmesan
  • 60 g packet baby rocket leaves

  1. In a large bowl combine mince, egg and breadcrumbs, mix well. Form tablespoonfuls of mixture into 16 meatballs.

  2. Heat oil a large frying pan over medium-high heat. Cook meatballs, turning occasionally for 8 minutes or until browned. Add combined Recipe Base, water and tomatoes. Bring to the boil, stirring. Reduce heat to medium- low and simmer, uncovered, for 10 minutes, stirring occasionally or until meatballs are cooked through and the sauce has thickened.

  3. Divide meatballs and sauce among bread roll bases. Top with cheese, rocket and bread roll tops.
