  • 170 g packet Continental Pasta & Sauce Macaroni Cheese - Family Pack
  • 2 cups (500mL) hot water
  • 1 cup (250mL) lite milk
  • 2 teaspoons polyunsaturated margarine
  • 1 tablespoon oil
  • 1 carrot, coarsely grated
  • 1 zucchini, coarsely grated
  • 400 g extra lean beef mince
  • 1 cup (250mL) pizza sauce
  • 1/2 cup grated mozzarella cheese
  • fresh basil leaves, to garnish
  • mixed leaf salad, to serve

  1. Preheat oven to 220°C (200°C fan-forced). Place pasta packet contents, 1 ½ cups (375mL) hot water, milk and margarine in a saucepan. Bring to the boil, stirring. Reduce heat and simmer for 10-12 minutes, stirring regularly, or until pasta is cooked through and sauce has thickened.

  2. Meanwhile heat oil in a large frying pan over medium-high heat. Add carrot and zucchini and cook, stirring, for 5 minutes. Add mince and cook until browned. Stir in pizza sauce and remaining ½ cup hot water. Bring to the boil, stirring. Reduce heat and simmer for 5 minutes, stirring occasionally.

  3. Spread half the mince mixture evenly over the base of a 6-cup (1.5L) capacity ovenproof dish. Top with half the macaroni cheese then top with remaining mince mixture and remaining macaroni cheese. Top with mozzarella cheese. Place onto a baking tray. Bake for 12 minutes or until cheese is golden brown. Garnish with basil leaves. Serve with salad.
