One Pot Bolognese

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 500 g lean beef mince
  • 2 cloves garlic, crushed
  • 1 litre hot water
  • 2 pots Continental Stock Pot Sensations Beef Stock Pot
  • 140 g tub tomato paste
  • 400 g canned diced tomatoes
  • 2 teaspoons dried oregano
  • 4 1/2 cups (300g) large spiral pasta
  • 120 g packet baby spinach leaves
  • freshly ground black pepper, to taste
  • freshly grated Parmesan cheese

  1. Heat oil in a large heavy-based saucepan over medium heat. Add onion and cook, stirring occasionally, for 5 minutes or until softened. Add carrot and cook, stirring occasionally, for 5 minutes or until tender.

  2. Increase heat to medium high. Add beef mince and garlic. Cook until browned, stirring with a wooden spoon to break up mince. Add hot water, stock pots, tomato paste, diced tomatoes and oregano. Bring to the boil, stirring. Stir in pasta. Reduce heat to medium. Cover and simmer, stirring occasionally, for 15 minutes.

  3. Str through spinach leaves and cook, stirring occasionally, for a further 3 minutes or until liquid is mostly absorbed and pasta is tender. Season to taste with pepper. Serve with Parmesan cheese and green salad.
