Mini Samosas

  • 1 onion, finely chopped
  • 500 g beef mince
  • 1 carrot, finely diced
  • 3/4 cup (190mL) water
  • 1 packet Continental Recipe Base Mild Mince Curry
  • 3 sheets puff pastry, partially thawed
  • 1 egg, lightly beaten

Minted Yoghurt Dipping sauce

  • 1 cup full fat Greek-style natural yoghurt
  • 1/3 cup chopped mint
  • 1 tablespoon mango chutney

  1. Preheat oven to 200°C. Line two large baking trays with non-stick baking paper.

  2. Heat oil in a large frying pan over medium-high heat. Add onion and cook, stirring occasionally, for 5 minutes until tender. Add mince and carrot, and cook, stirring until beef has browned. Add water and Recipe Base and simmer, covered for 10 minutes. Set aside to cool slightly.

  3. Cut each sheet of pastry into 16 squares. Place a little mince in the middle of each square and fold to form small triangles. Lightly brush pastry edges with a little whisked egg. Fold each pastry over to form a triangle to enclose filling and press the edges together firmly with a fork to seal. Place on lined tray. Lightly brush the samosas with any remaining egg. Bake for 10 minutes or until puffed and golden. Serve with minted yoghurt dipping sauce.

  4. Combine all ingredients and serve with samosas.
