  • 1 tablespoon oil
  • 3 cups (450g) peeled diced pumpkin
  • 1 1/4 cups (410mL) hot water
  • 1 cup (250mL) lite milk
  • 150 g packet Continental Pasta & Sauce Chicken Curry - Family Pack
  • 1 1/2 cups frozen peas
  • 1 cup dry roasted cashews
  • 60 g packet baby spinach

  1. Heat oil in a large saucepan over medium heat. Add pumpkin and cook, stirring for 5 minutes. Add water, milk and pasta packet contents. Bring to the boil, stirring. Reduce heat and simmer for 8 minutes, stirring regularly.

  2. Add peas and cook for a further 2 minutes. Stir in cashews and spinach and cook until spinach has just wilted. Serve.
