  • 200 g thin dried rice stick noodles
  • 1 tablespoon oil
  • 500 g chicken thigh fillets, thinly sliced
  • 270 mL canned light coconut milk
  • 1 x 38 g sachet Continental Takeout Temptations Singapore Noodles Seasoning Mix
  • 3 cups (750mL) boiling water
  • 3 tsp fish sauce
  • 2 cups bean sprouts
  • 1 long red chilli, thinly sliced
  • 1/2 cup chopped fresh coriander leaves

  1. Prepare noodles following packet directions.

  2. Meanwhile heat oil in a wok, or large saucepan, over high heat. Stir-fry chicken for 4 mins. Add coconut milk, seasoning mix and fish sauce. Cook, stirring for 1 min. Stir in boiling water. Bring to the boil. Reduce heat to medium & simmer for 3 mins or chicken is cooked.

  3. Divide noodles among serving bowls. Ladle over soup mixture. Top with bean sprouts & coriander. Serve with chilli, if desired.

  4. Swap chicken for: • 500g hard or extra firm tofu, cut into 2cm pieces. • 500g frozen peeled raw prawns, thawed, drained. Stir-fry 1 min. • 500g skinless boneless salmon fillet, cut into 2cm pieces. Cook for 1 min each side.
