  • 145 g packet Continental Pasta & Sauce Bacon Carbonara - Family Pack
  • 1 cup (250mL) hot water
  • 3/4 cup (190mL) lite milk
  • 1 cup frozen corn kernels, thawed
  • 1/3 cup grated tasty cheese
  • 1/3 cup plain flour
  • 1/4 cup finely chopped rindless shortcut bacon
  • 2 spring onions, thinly sliced
  • 4 eggs, lightly beaten
  • 1/4 cup canola oil, to pan-fry
  • garlic aioli and lemon wedges, to serve
  • salad, to serve

Corn & Carbonara Pasta Fritters
  1. Place pasta packet contents, water and milk in a saucepan. Bring to the boil, stirring. Reduce heat and simmer for 10 minutes, stirring regularly or until pasta is cooked and sauce has thickened. Transfer to a large bowl. Set aside to cool for 10 minutes. Add corn, cheese, flour, bacon, spring onion and eggs to pasta. Mix until combined.

  2. Heat 2 tablespoons oil in a large frying pan over medium heat. Add three ⅓ cup portions of pasta mixture to pan. Flatten slightly. Cook for 2 minutes each side or until golden brown. Transfer to a plate, cover to keep warm.

  3. Add a little more oil to the pan if needed. Repeat with remaining pasta mixture. Serve fritters warm with aioli, lemon wedges and salad.
