  • 1 tablespoon vegetable oil
  • 1 medium red onion, halved, thinly sliced
  • 3 teaspoons chilli paste
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 litre hot water
  • 2 pots Continental Stock Pot Sensations Chicken Stock Pot
  • 500 g chicken breast fillets, thinly sliced
  • 3 tablespoons reduced-salt soy sauce
  • 1 1/2 tablespoons rice vinegar
  • 100 g rice vermicelli
  • 4 spring onions, thinly sliced

  1. Heat oil in a large saucepan over medium heat. Add onion and cook, stirring occasionally, for 5 minutes until softened. Add chilli, garlic and ginger and cook, stirring for 1 minute.

  2. Add hot water and stock pot to saucepan. Increase heat to high, and bring to the boil, stirring. Reduce heat to medium. Add chicken and soy sauce. Cook for 5 minutes, stirring occasionally, or until chicken is just cooked. Stir in vinegar. Season to taste.

  3. Meanwhile place vermicelli noodles in a large heatproof bowl. Cover with boiling water and set aside for 2 minutes or until softened. Drain. Rinse with cold water.

  4. Divide noodles between 4 serving bowls. Ladle in the soup and chicken. Top with spring onions and serve.
