    Serves

  • 105 g packet Continental Pasta & Sauce Macaroni Cheese
  • 1 cup (250mL) water
  • 3/4 cup (190mL) light milk
  • 2 teaspoons margarine
  • 1 cup frozen corn kernels or canned corn kernels
  • 1 tablespoon oil
  • 1/3 cup finely chopped bacon
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons finely grated Parmesan cheese
  • 1 tablespoon finely chopped chives
  • 200 g mixed leaf salad, to serve

  1. Place pasta packet contents, water, milk and margarine in a saucepan. Bring to the boil, stirring. Reduce heat and simmer, stirring regularly, for 8 minutes. Stir in corn. Bring back to the simmer. Cook, stirring regularly, for a further 2 minutes or until pasta is cooked and sauce has thickened.

  2. Meanwhile heat oil in a frying pan over medium-high heat. Cook bacon, stirring, for 2-3 minutes until golden brown. Add breadcrumbs and cook, stirring, for 2-3 minutes until golden and toasted. Transfer to a bowl and set aside to cool slightly. Stir in parmesan and chives.

  3. Divide pasta among serving bowls. Top with breadcrumb mixture. Serve with salad.
