Mexican Beef Taco Pies

  • 1 tablespoon oil
  • 500 g lean beef mince
  • 400 g canned diced tomatoes
  • 1 sachet Continental Recipe Base Chilli Con Carne
  • 400 g canned black beans, rinsed and drained
  • 1/2 cup frozen corn kernels
  • 1/4 cup (60mL) water
  • 8 mini tortillas
  • 1 cup grated tasty cheese
  • 1 large avocado, diced
  • 1/3 cup light sour cream, to serve
  • mixed leaf salad, to serve

  1. Heat a large frying pan over medium-high heat. Add mince and cook until browned. Stir in tomatoes, chilli con carne mix, beans, corn and water. Bring to the boil, stirring. Cover, reduce to medium-low and simmer for 10 minutes, stirring occasionally. Transfer to a bowl. Set aside for 5 minutes to cool slightly.

  2. Meanwhile place avocado in a bowl, add lime juice, toss to coat. Season to taste. Cover and place in the fridge until ready to serve.

  3. Preheat Sunbeam Pie Magic® pie maker. Spray oil into hole cavity of the pie maker. Press 4 tortillas into holes. Close the pie maker and cook for 3 minutes or until tortilla starts to become firm. Press down tortilla with a spoon if t puffs up slightly.

  4. Fill tortilla with ½ cup (level) of the mince filling. Sprinkle over some of the cheese. Close piemaker and cook for 8 minutes or until golden brown and cheese has melted. With some paper towel carefully wipe away any excess cheese or filling from top of pie maker. Serve with smashed avocado, sour cream and salad.
