  • 2 tablespoons oil
  • 1 onion, chopped
  • 500 g skinless chicken thigh fillet, cubed
  • 2 tablespoons mild curry paste
  • 1 x 400 g can light coconut milk
  • 1 Continental Stock Pot Sensations Chicken Stock Pot
  • 2 tablespoons peanut butter
  • 1 large tomato, chopped
  • 1/4 cup coriander leaves
  • steamed basmati rice, to serve

Mild Indian Chicken Curry Recipe
  1. Heat oil in a large deep frying pan over medium heat. Add onion and cook, stirring regularly, for 8 minutes until golden and softened. Increase heat to medium-high. Add chicken and cook, stirring, for 4 minutes. Add curry paste and fry for another minute.

  2. Add coconut milk, Stock Pot and peanut butter. Bring to the boil, stirring. Reduce heat to medium-low and simmer for 15 minutes or until chicken is cooked and sauce has thickened slightly.

  3. Stir through tomatoes, and cook for a further 5 minutes. Sprinkle with coriander. Serve with rice.
