  • 500 g chicken thigh fillets, diced
  • 250 g green beans, trimmed, halved
  • 1 x 44 g sachet Continental Takeout Temptations Pad Thai Seasoning Mix
  • 1 long red chilli, finely chopped
  • 1/2 cup water
  • 1/2 cup roasted unsalted cashews
  • 1/2 cup basil leaves, roughly torn
  • steamed jasmine rice, to serve

  1. Heat a wok, or large non-stick frying pan, over high heat. Add 1 tbsp oil, swirl to coat. Stir-fry chicken for 4 mins or until golden brown

  2. Add beans and chilli, stir-fry for a further 2 mins or until just tender.

  3. Combine seasoning mix and water. Pour over chicken mixture. Stir-fry for 2 mins or until sauce has thickened slightly and chicken is cooked. Add cashews and basil leaves, stir-fry for 30 secs. Garnish with a little extra basil and serve with rice.
