  • 1 tbsp oil
  • 500 g chicken mince
  • 1 x 44 g Continental Takeout Temptations Pad Thai Seasoning Mix
  • 100 g green beans, thinly sliced
  • 1 small red onion, halved, thinly sliced
  • 1/2 cup chopped coriander leaves, plus extra to garnish
  • 1 tbsp lime juice
  • 1 long red chilli, thinly sliced
  • 450 g packet microwave jasmine rice, heated
  • 2 Lebanese cucumbers, thinly sliced
  • 2 baby cos lettuce, or little gem lettuce, leaves separated

  1. Heat a wok, or large deep non-stick frying pan over high heat. Add oil, swirl to coat. Add chicken and stir-fry for 3 mins. Add seasoning mix and water. Stir fry for 2 mins.

  2. Add beans and red onion, stir-fry for 2 mins. Remove from heat. Stir in coriander, lime juice and half the chilli.

  3. Place chicken mixture into a serving bowl. Serve with rice, cucumber, lettuce leaves, lime wedges and remaining chilli.
